this is the best video of bike stunts of gta. Is the best video of darkness and kaneda (Darkan), the best GTA stunters. that was my opinnion years ago. It's not mods for god's sake, it's the Vice city physic (fake). and years of practice, you can make bumps with some days of practice, try SA is easyer. look for tutorials on YT and about the taxi boost, you get it after 100 taxi fares, it's actually a small bump used to get vertical with the wall and tap boost to climb it.
